Vegetable Poha cutlet

Potato (boiled) 2 nos
Onion 1 cup, chopped
Carrot 1 cup, chopped
Capsicum 1 cup, chopped
Cabbage 1 cup, chopped
Tomato 1 cup, chopped
Coriander 1 cup, chopped
Chilli 2-3, chopped
Turmeric powder 1/2 tsp
Coriander powder 1/2 tsp
Red chilli powder 1/2 tsp
Mango powder 1/2 tsp
Chaat masala 1 tsp
Raisins 1 cup
Sesame seeds 2 tsp
Peanuts 1 cup, chopped
Salt as per taste
Poha (washed) 4 cups
Saffola oil as needed
Curry leaves for garnishing
Take a bowl, add two boiled potatoes. Add the rest of the ingredients: chopped onions, carrots, capsicum, cabbage, tomato, coriander leaves, chillies, turmeric powder, coriander powder, red chilli powder, mango powder, chaat masala, raisins, sesame seeds, crushed peanuts, salt and poha.

Mix well to make a medium soft dough. Let the dough rest for 10 minutes.

Apply oil in hands and make small patties of the dough. Shallow fry them on medium flame in Saffola oil.

Serve hot with ketchup. Enjoy!
