Veg Frankie with Ragi Roti

For The Rotis    
Whole Wheat Flour ½ cup
Rice Flour ¼ cup
Ragi Flour ¼ cup
Salt as per taste
Oil ¼ tbsp
Butter 2 tsp, for cooking the roti
For Stuffing    
Olive Oil 1 tbsp
Tofu ½ cup, cut in cubes
Broccoli Florets ¼ cup, blanched
Beans  ¼ cup, blanched and cut 1 inch long
Red Cabbage  ½ cup, sliced thinly
Red Bell Pepper  1, sliced thinly
Garlic 4 cloves, chopped finely
Hummus (optional) 2 tbsp

For the rotis
Mix all the flour together with salt and knead a soft dough and set aside to rest, for about 10 minutes. Knead again and then Divide the dough into 4 equal portions. Roll out the dough in a circle.

Heat a tava and cook each roti lightly on both sides on a medium flame for 1 minute and keep aside. For stuffing
Heat the oil in a deep non-stick pan, add garlic and saute till they turn golden brown.

Add rest of the ingredients and saute on a high flame for about a minute. Season with salt and pepper.

To assemble take a roti and warm it a bit. Spread hummus on it evenly (optional). Put a portion of sauteed vegetable in the centre and top with sour cream. Wrap it lightly like a roll and serve.
