Sweet n Tangy Quinoa Salad

Quinoa 1 cup, boiled
Avocado (optional) 1 no, chopped
Pomegranate 1 cup
Shallots (or Onions) 1-2, sliced thinly
Cucumber 1 no, chopped
For the dressing    
Tamarind Pulp 1 tbsp
Jaggery Syrup 1 tbsp
Orange Juice 2 tbsp
Olive Oil 1 tbsp
Chaat Masala 1 tsp
Salt as per taste
Pepper as per taste
In a bowl add boiled quinoa, avocado (optional), pomegranate, shallots and cucumber and mix them well.

To make the dressing, in a blender give a quick blend to all the ingredients.

Mix the dressing with the quinoa and serve.
