|Multigrain Bread||–||1-2 slices, soaked in water|
|Almonds||–||1 cup, peeled and soaked overnight|
|Green Grapes||–||2 cup|
|Onion||–||1 small, chopped|
|Cucumber||–||1, peeled and deseeded|
|Olive Oil||–||as required|
|Squeeze the water from the bread and to the blender/food processor. Add almonds, grapes, onion, garlic, cucumbers, lemon zest and juice, salt and pepper and a good drizzle of olive oil. Start with ½ cup of water and blend to make a smooth paste. Add more water if necessary, mix well and strain using a fine mesh sieve.
Chill in the fridge for at least 2 hours. Garnish with lemon zest and slices of grapes.
