Spanish Chilled Bread and Almond Soup

Multigrain Bread 1-2 slices, soaked in water
Almonds 1 cup, peeled and soaked overnight
Green Grapes 2 cup
Onion 1 small, chopped
Garlic 2 cloves
Cucumber 1, peeled and deseeded
Lemon 1 no
Salt to taste
Pepper to taste
Olive Oil as required
Water as required
Squeeze the water from the bread and to the blender/food processor. Add almonds, grapes, onion, garlic, cucumbers, lemon zest and juice, salt and pepper and a good drizzle of olive oil. Start with ½ cup of water and blend to make a smooth paste. Add more water if necessary, mix well and strain using a fine mesh sieve.

Chill in the fridge for at least 2 hours. Garnish with lemon zest and slices of grapes.
