Sauteed Tofu with Greens

Spinach 1 bunch, sliced
Spring Onions 1 no, chopped
Garlic 2 cloves, chopped
Ginger ½ inch, chopped
Soy Sauce 1 tbsp
Tofu (or Paneer) 1 cup, cut into cubes
Green Peas ¼ cup
Oil 1 tbsp
Salt as per taste
Pepper as per taste
Wash the spinach and drain all the water.

Heat a little oil in a frying pan, and stir-fry spring onions, ginger, and garlic. Stir in soy sauce, tofu, and peas.

In a separate frying pan, heat a tablespoon of oil and stir in black pepper. Add spinach and sauté it. Cover the pan and let it steam for 30 seconds.

Add sautéed tofu and vegetables to spinach. Mix well and serve hot.
