|Red sweet pumpkin||–||1 no, peeled and diced|
|Pine Nuts||–||¼ cup|
|Cheese (Parmesan or Processed)||–||¼ cup, grated|
|Olive Oil||–||4 tbsp|
|Salt||–||as per taste|
|Pepper||–||as per taste|
In a grill, pan grill the pumpkin on medium high heat until slightly charred and cooked through. Set aside to let it cool once cooked.
In a blender add the pumpkin and rest of the ingredients except oil and start blending.
Keep adding oil a tbsp a time while blending. Season with salt and pepper. Serve with toasted bread or crackers.
