Roasted Pumpkin Pesto Dip

Red sweet pumpkin 1 no, peeled and diced
Garlic 4-5 cloves
Pine Nuts ¼ cup
Cheese (Parmesan or Processed) ¼ cup, grated
Olive Oil 4 tbsp
Salt as per taste
Pepper as per taste
In a grill, pan grill the pumpkin on medium high heat until slightly charred and cooked through. Set aside to let it cool once cooked.

In a blender add the pumpkin and rest of the ingredients except oil and start blending.

Keep adding oil a tbsp a time while blending. Season with salt and pepper. Serve with toasted bread or crackers.
