Pesto Spinach Wheat Pasta

Penne Pasta (boiled) 200 gms
Spinach 1/2 bunch, blanched
Olive oil 4 tbsp
Garlic 4-5 cloves
Peanuts 1/4 cup
Salt as per taste
Toasted bread crumbs 1/4 cup
Salt as per taste
Herbs/oregano (dried) for garnishing
Fresh cream 1/2 cup
Processed Cheese optional
Black pepper powder 2 tsp

Blanch your spinach. Chop it, roughly. Add the spinach in a blender with garlic cloves, olive oil, peanuts and salt. Blend it into a fine paste.

Heat a non-stick pan and add a little olive oil. Add the spinach mix, penne pasta, fresh cream, mixed herbs. If you wish to add cheese, you may. Mix well.

Transfer onto a serving platter, garnish with oregano/chilli flakes.

Drizzle olive oil, if you like.
