|Coconut milk||–||4 tbsp (thick)|

|In a bowl, mix red chilli powder, paprika, curry powder, cardamom powder, salt, oil and two tablespoons of coconut milk. Mix with a spoon or whisk.
Add black pepper if you need it spicier (optional). Add 2 more tbsp of coconut milk to make a smooth marinade. Add one-inch stalk lemon grass for flavour. Use the white portion of lemon grass.
Add paneer pieces cut into cubes. Coat them with this marinade and rest them for 30 minutes to absorb the flavours. After 30 minutes, thread 3 pcs of paneer cubes on to a small skewer. Make 5 skewers, likewise.
Take a grill pan or normal pan, brush that with oil and cook paneer satay from all the sides. Once cooked, serve them with a side salad lemon wedge and drizzle with peanut sauce.
