Mediterranean Style Tortilla Pizza

Taco 4 no
Pumpkin Pesto 2 tbsp 
Cherry Tomato 8-10, cut in half
Corn Kernels ½ cup, boiled
Basil handful
Madras Onion/Shallots 3-4, cut in rings
Mozzarella Cheese 1 block
Salt as per taste
Pepper as per taste
Olive Oil as needed

In a pan heat oil. Toast the taco on both sides until crisp. Spread the pumpkin pesto smoothly over the taco. Spread the cheese by tearing with hands, and other ingredients like on a pizza. Serve immediately.
