Lemony Lentil Soup

Olive Oil 2 tbsp
Cumin 1 tsp
Curry leaves handful
Onion 1 medium, chopped
Garlic 6-8 cloves, chopped
Ginger chopped 2 tsp
Green Chilli 1-2 slit in half
Turmeric ½ tsp
Tomato 1 large, chopped
Arhar/Toor Dal 1 cup
Salt as per taste
Pepper as per taste
Coriander leaves handful
Lemon Juice 1 tbsp
Wash the dal in plenty of water & soak it for 15mins. In a pan heat oil and add cumin leaves.

Once it splatters add onion, garlic, ginger, green chilli and curry leaves. Give a quick stir for 2 mins.
Add turmeric, sauce and add the tomatoes. Cook them for another 3 mins.

Add salt, pepper and 5 cups of water. Boil the dal till it is mashy. Once cooked use a blender to make it smooth.

Add coriander chopped and some lemon juice and serve hot.
