Indian Style Lemon Quinoa

Mustard Seeds½ tsp
Curry Leaf1 sprig, chopped
Peanuts1 tbsp, deskined and crushed
Ginger½ inch, chopped
Turmeric Powder¼ tsp
Quinoa ½ cup, boiled
Lemon Juice1 tbsp
Saltto taste
Oil1½ tbsp
Pepper to taste

In a pan heat oil. Add mustard seeds and let it splatter. Add peanuts and cook until golden brown. Add curry leaf and cook for a minute. Add ginger and saute till light brown. Lower the flame. Add turmeric powder and cook for a few seconds.

Add the boiled quinoa to the pan. Saute it until it turns to a nice golden color. Season it with salt pepper and lemon juice.
