|Pomegranate seeds||–||2 cups|
|Olive oil||–||to drizzle|
|Flat leaf parsley or lettuce||–||1 big bunch|
|Mint Leaves||–||1 small bunch|
|Add 1/2 cup of boiled water to couscous. Cover & leave it for 20 mins. Once it cools down, fluff it up with a fork.
Now add pomegranate seeds, salt, pepper, olive oil & squeeze lemon. Wash and clean parsley & mint.
Chop them both fine & mix with the pomegranate. Toss & serve immediately.
