|Garlic||–||5-6 cloves, finely chopped|
|Potato (cut into wedges)||–||24 wedges|
|Dried Methi leaves||–||2 tsp|

Preheat the oven at 220 degree celsius. In a large bowl, combine the olive oil, garlic, methi leaves, salt and pepper. Add the potatoes and toss to coat. Arrange the potatoes in a single layer in a baking tray with parchment paper and bake for 20 minutes.
Take out and toss and cook for another 10 minutes. Lower the heat to 180 degree celsius and bake until golden-brown and crisp. Once done serve hot.
